Macaroni with Asparagus, Fava Beans and Rocket Pesto

As the fava beans come into season, this is a lovely dinner to enjoy. It can also be served cold as a salad.

Thai style tofu and snow peas on rice vermicelli with lime peanut sauce

This is one of our favorite meals. The spicy, lemony flavors are a wonderful addition to the peanut butter.

Lentil chili

This was a new way for us to enjoy chili by using the lentils. It was very tasty and warmed us well on a chilly spring evening.

Spinach pasta with asparagus and pesto sauce

This is really a quick and easy meal that is healthy and tasty.

Serving Size: 2
Ingredients:

250 grams spinach pasta (tagliatelle)
200 grams asparagus
130 grams (or small jar) basil pesto
lemon juice

Directions:

Bring a large pot of salted water to boil.

Asparagus ravioli with creamy lemon sage sauce

What an elegant and tasty meal this was! It is a bit of trouble to make, but well worth it.
