Pumpkin Soup with Maple Syrup and Horseradish

Sweet but with a zing. This simple pumpkin soup was very tasty. The horseradish gave it a bit of a zing, while the maple syrup brought out the sweetness of the pumpkin. The other spices are also quite important to the flavor of the soup. We really enjoyed this soup.

Beet Risotto with Horseradish and Dill Soy Yogurt

We enjoyed this mild but flavorful recipe for beet risotto last night. Both beets and risotto rice are very mild in flavor, so they are able to support the strong flavor of horseradish without it overpowering the flavors. The creamy dill soy yogurt brought both a creamy flavor and smooth texture to the meal.

Horseradish Sunflower Spread or Dip
This is a very tasty spread for whole grain breads and rolls, or it can also be nice as a dip for fresh crunchy vegetables. It has a slight “peppy bite” flavor from the horseradish, but it’s not so strong as to be bitter. We’ve enjoyed it so much, I now double the recipe.
