<p><strong>Ingredients: </strong></p>
<ul>
<li> 1- 8 ounce can pineapple slices (reserve 1 ring as garnish)</li>
<li> 1 cup soy yogurt</li>
<li> 1 cup pineapple juice</li>
<li> 1 cup blackcurrant juice or syrup</li>
<li> 1 medium banana</li>
<li> ice cubes (optional)</li>
<li>mint leaves or lemon balm as optional garnish</li>
</ul>

<p><strong>Directions: </strong></p>
<ol>
<li> Place all ingredients in a blender and blend until smooth.</li>
<li> Pour into glasses and garnish with a piece of pineapple and a sprig of green.</li>
</ol>

<p>We made our own blackcurrant syrup using fresh blackcurrants from our garden.<br />

<li> Put the soy yogurt, pumpkin puree and orange juice in a blender and whiz to a smooth consistency.</li>
<li> Add the spices and banana and whiz once again.</li>
<li> Season to taste with additional seasonings if you feel they are needed.</li>
<li> Garnish  with a bit of cinnamon and enjoy!</li>

<p><strong>Ingredients: </strong></p>
<ul>
<li> 1 cup stewed rhubarb (cooled)</li>
<li> 1 banana</li>
<li> 1 cup plain soy yogurt</li>
<li> splash lemon juice</li>
<li> 1/2 teaspoon ground cinnamon</li>

<p><em>For the stewed rhubarb:</em></p>
<ul>
<li> 1 &amp; 1/2 cups chopped rhubarb</li>
<li> 4 ounces sugar (or less to taste)</li>
<li> 1/4 cup water</li>
</ul>

<p><strong>Directions: </strong></p>
<p><em>To make the stewed rhubarb:</em></p>
<ol>
<li> Place the rhubarb in a small saucepan.</li>
<li> Add the sugar and water and bring to a boil.</li>
<li> Watch it careful and stir so that it does not boil over.</li>
<li> When the rhubarb has broken down, remove from the heat and allow to cool.</li>
</ol>
<p><em>To make the smoothie:</em></p>
<ol>
<li>Place the cooled stewed rhubarb in a blender.</li>
<li> Add the banana (peeled and in chunks).</li>
<li> Add the soy yogurt.</li>
<li> Blend to a smooth consistency.</li>
<li> Add the splash of lemon juice and the cinnamon and pulse once again.</li>
<li> If you wish a thinner smoothie, you can add some ice cubes or soy milk.</li>
<li> Garnish by sprinkling with cinnamon, and add perhaps a twig of lemon balm.</li>

<p>Please, give the <a href="http://tastespace.wordpress.com/2010/05/02/south-african-spiced-butternut-squash-and-roasted-banana-soup-with-coconut-and-lime/">recipe</a> a try as it is really tasty. It&#8217;s easy to veganize by  using maple syrup instead of honey and change the butter to vegan margarine. Otherwise the recipe is vegan. We used a pumpkin but either butternut squash or pumpkin work well. And,  please use a lime not a lemon.</p>

			<content:encoded><![CDATA[<p><a href="http://en.wikipedia.org/wiki/Tamarind">Tamarind</a> is one of my favorite fruits. Not too many people are familiar wit it or use it, but it is quite handy.</p>

<p>It is very sour and usually will be found sweetened. People of India and Indonesia add chili pepper or cayenne with it, making it sweet yet hot. We enjoyed <a href="http://www.recipezaar.com/Baked-Bananas-With-Tamarind-Sauce-235925 ">this recipe from recipezaar</a> last weekend. It only took a little adaptation to be vegan using vegan margarine rather than butter. I did add cayenne to the sauce as well.</p>

<p><strong>Directions:</strong></p>
<p>To make the filling:</p>
<ol>
<li>Place the cut rhubarb with 2 tablespoons of sugar and about 1/4-1/2 cup of water ina saucepan and heat.</li>
<li>Cook the rhubarb until it breaks down.</li>
<li>Cut the bananas in pieces, add to the rhubarb with the lemon juice and continue cooking.</li>
<li>remove from the heat when the bananas have soften and mix well.</li>
<li>Taste, and possibly add a bit more sugar or lemon juice.</li>
</ol>
<p>To make the windmills:</p>
<ol>
<li>Preheat the oven to 428 F / 220 C.</li>
<li>Thaw the puff pastry sheets and place them on a baking parchment lined cookie sheet.</li>
<li>Using a knife, carefully cut each corner in half almost to the center, but not completely.</li>
<li>Place a dollop of the rhubarb banana jam in the center area that has not been cut.</li>
<li>Bring each of the 4 right sides of the cut corners to the center of the windmill.</li>
<li>Place the tips so that they overlap at the center.</li>
<li>Optionally you can brush the pastry with water and sprinkle sugar over the pastry.</li>
<li>Bake for 15 minutes or until golden and puffed.</li>
<li>Allow to cool before removing from the cookie sheet.</li>
</ol>
<p><strong>Notes:</strong></p>
<p>These windmills are very easy to make and kids would have fun making them. Of course you can fill them with any sort of jam.<br />
The recipe amkes a lot of jam. If you don&#8217;t want to make 12 windmills, of course you can use the jam for other recipes.</p>

<li>2 cups pumpkin or butternut squash, chopped</li>
<li>1 banana</li>
<li>1/2 leek, white part only</li>
<li>1 clove garlic, minced</li>
<li>1 inch ginger, peeled and grated</li>
<li>2 pinches cumin</li>
<li>1/2-3/4 cup apple juice</li>
<li>2-3 Tbs. almond flour</li>
<li>thyme</li>
<li>salt</li>
</ul>
<p><strong>Directions:</strong></p>
<ol>
<li>Chop the pumpkin into small pieces, or grate.</li>
<li>Slice the leek into small rings.</li>
<li>Mince the garlic.</li>
<li>Place in a blender with the apple juice and puree to a smooth consistency.</li>
<li>Add the seasonings and taste.</li>
<li>Add the almond flour to thicken.</li>
<li>Depending on what you like, season with more slat, a dash of cayenne or more cumin.</li>
<li>You can make the soup thinner with more apple juice.</li>
</ol>
<p><strong>Notes:</strong></p>
<p>I combined ingredients from both of the recipes at Gone Raw. As my husband is allergic to raw apples, I did not put the raw apples in as one of the recipes suggests, however did use fresh organic apple juice which seems to be o.k. for him. I would suggest that you don&#8217;t make this too far in advanced from serving, as because of the banana, the soup becomes darker and stronger with banana flavor.</p>

<p>for the crepes</p>

<li>1 cup gram (chick pea) flour</li>

<li>2 Tbs. vegetable oil</li>

<li>2 bananas, sliced in rounds</li>
<li>2 Tbs. peanut butter</li>
<li>1 vegan dark chocolate candy bar, broken in pieces</li>
<li>2 tsp. vegetable oil</li>
</ul>
<p><strong>Directions:</strong></p>
<p>To make the crepes:</p>
<ol>
<li>Whisk all the crepe ingredients together.</li>
<li>Pour through a sieve to collect any flour stones. and prepare the bananas and chocolate.</li>
</ol>
<p>Prepare the filling/sauce:</p>
<ol>
<li>Slice the bananas.</li>
<li>Place the chocolate bar with the 2 tsp. oil in bowl suited for the microwave and heat for 2 minutes or until soft.</li>
<li>Mix the melted chocolate with the oil to a smooth and liquid consistency.</li>
</ol>
<p>To make the crepes:</p>
<ol>
<li>Pour 1/3 of a cupful into a well heated non stick crepe pan.</li>
<li>Tip the pan to spread the batter evenly.</li>
<li>Batter should have thin coverage.</li>
<li>Let the crepe cook until it is loose when you shake the pan.</li>
<li>Flip with a spatula.</li>
<li>Continue cooking for 1 minute longer.</li>
<li>Spread each crepe with some peanut butter.</li>
<li>Place a few slices of banana on the peanut buter and fold the crepe over.</li>
<li>Place on n individual serving plate and drizzle the chocolate over.</li>
