Apricots Filled with Almond and Cranberry Soy Ricotta

These lovely apricots would make a very nice addition to any party. The can be used as a vegan tapas, finger food or an appetizer.
Yield: 2 doz.
Ingredients:
1 pkg. dried apricots
1 cup soy yogurt
2 tablespoons cashew nut butter
2 tablespoons amaretto or almond extract

Apricot Coconut Cookies

Ingredients:
200 grams whole wheat flour
100 grams brandy
80 grams margarine, softened
25 grams corn or rice syrup
100 grams dried apricots, soaked and cut into pieces
50 grams flaked coconut
4 tbs. apple juice
