Roasted carrot & ginger soup with lemon yogurt

This is one of our top five favorites. It looks great as good as it tastes.

Serving Size: 4
Ingredients:

500 grams carrots, washed, peeled and sliced
1 2inch ginger, peeled and grated
1 can coconut milk
1/2 liter water
1 small onion, finely chopped
1 clove garlic, minced
2 tsp. turmeric
1 tsp. ginger powder
salt and pepper to taste

This is a sweet and spicy sauce that we enjoy on pasta with vegetables. We originally had it at Wagamama’s in Amsterdam (number 51 on the menu) and have since tried to create a likeness. It is one of our favorites and we hope you will enjoy it also.

Stuffed Portobello Mushroom Salad

Ingredients:

4 large portobello mushrooms
3 carrots , peeled and grated
100 grams frozen peas, thawed
4 tbs. soy yogurt
2 tsp. olive oil
1 tbs. packaged salad dressing seasonings

Directions:

Place the mushrooms upside down on a bed of lettuce or mixed salad greens.
