Cutting the celery root into small matchstick sized pieces is the secret to this tasty salad. We’ve been eating more raw vegetables lately and this salad was one that we really enjoyed.

This soup can be served either warm or cold.
Ingredients:
3 large avocados
3 tblsp lemon juice
3 cups good vegetable bouillon
1/4 cups soy cream (Alpro Cuisine for example)
1/2 tsp black pepper

Directions:
Puree the avocados with lemon juice, vegetable bouillon and soy cream.
Add black pepper to taste (and a hint of salt if needed).
