Heidi Swanson of 101 Cookbooks is a superb cook, as well as a great photographer and writer. She has written many good cookbooks. Heidi is not vegan, however vegetarian and always has very healthy recipes.
Our zucchini plants have done very well this year and so we were looking for ways to preserve them. We were quite happy to find this recipe for pickled zucchini. It is quick and easy to make and they taste delicious. We also made a vegan version of the sandwich using vegan cream cheese on a lovely dark whole grain bread and the zucchini pickles. We will be making more of these pickles as this tasted so good, and our plants are still producing lovely zucchini.
