Brussels Sprouts with Walnuts and Pears
This side dish would be a tasty addition to any meal. The mixture of flavors and textures is very nice.

Serving Size: 4
Ingredients:
- 1 lb. Brussels sprouts
- 1-2 pears, peeled and cut
- 1/3 cup walnuts, toasted and chopped
- 2 tablespoons walnut oil
- 1 tablespoon fine olive oil
- 1/2 teaspoon Dijon mustard
- 1 tablespoon sherry vinegar
- salt and pepper to taste
- Balsamic vinegar as garnish

Directions:
- Cut the Brussels sprouts in half.
- We preferred to steam them, but roasting is also good.
- Chop the walnuts, and toast in a dry frying pan.
- Prepare the sauce by mixing the oils, vinegar and mustard with sat and pepper.
- Depending upon the size of the pears, you will need 1 large or 2 small-medium.
- Peel the pears, and cut in medium bite sized chunks, discarding the seeds and core.
- When the Brussels sprouts are cooked, place in a bowl, drizzle the sauce over and mix well.
- Add the pear pieces and place in a serving dish.
- Sprinkle the walnuts over the top and drizzle with balsamic vinegar.

i made this for a quick dinner tonight for the family…i had just bought a big bag of brussel sprouts at costco that were calling my name…
i also had the pears as well…i did not use walnuts as we had walnuts on oatmeal in the morning…so i used chopped pecans…
i roasted my brussel sprouts in the oven lightly (aka not french fry style brussel sprouts)…
i opted for a balsalmic reduction made from balsalmic vinegar and maple syrup instead…just craving more of a sweet dressing…
i made a quick pilaf of rice in another bowl…
overall it was easy and delicious!…love to include the anti-inflammatories like b.sprouts and pecans!..this recipe goes into my ‘keep’ folder!

I’m glad you found e recipe tasty and useful. We enjoyed it also. Brussels sprouts have gotten a “bum rap” for a long time. They are really tasty and there are so many different things you can do with them. We enjoy just drizzling some good olive oil and balsamic vinegar o them. Although, apples and onions are also good, as well as banana soy sauce and coconut. They’re all on the Vegalicious website, and more coming as well. Brussels sprouts are so great.
