Beet and Mango Smoothie
We usually prefer fruit smoothies over vegetable ones, but this was an exception. The combination is really very tasty and refreshing.

Yield: 2 servings
Ingredients:
- 1 medium beet, peeled, cooked and pureed
- 1 ripe mango, peeled, stone removed and cut into pieces
- 2 cups mango juice
- 12-15 mint leaves
- 1 teaspoon agave syrup
- 1 lime, juiced
Directions:
- Place the pureed beet in a blender.
- Add the mango pieces, mango juice, lemon juice and mint.
- Whiz to a smooth consistency.
- Taste, if it is not sweet enough, add 1 teaspoon of agave syrup.
- You may want to add a bit more lemon juice also.

What a beautiful color! I usually juice my beets with a bunch of veggies and have never thought of using them in a smoothie like this. Looks very tasty.

Thank you for your comment. Yes, this was quite a surprise. It is a beautiful bright color, but not only that it really tasted great. We enjoyed this very much. It’s especially nice on a hot afternoon.
Hi Natalie, Thank you or your comment. I do hope you give it a try. It’s quite nice. It has a predominant flavor of mango, with the sweetness, but there’s also a beet flavor that is noticeable and all in all very good.
