This makes a tasty lunch or a nice warm salad.

Asparagus and Pears Wrapped In Vegan Cold Cuts

Ingredients:

  • 5 medium asparagus spears per person
  • 1 slice of vegan cold cuts per asparagus
  • 1/2 pear per person, peeled and sliced in thin slices
  • balsamic vinegar
  • toothpicks are helpful

Asparagus and Pears Wrapped In Vegan Cold Cuts

Directions:

  1. Clean and cut the woody end of the asparagus spears off.
  2. Bring a pan of lightly salted water to boil and cook the asparagus until tender.
  3. When the asparagus spears are cooked, remove from the pan and allow to cool slightly.
  4. Peel the pears, slice in half and discard the core with the seeds.
  5. Thinly slice the pear pieces, as if it is too large, you will not be able to wrap the vegan cold cut around the asparagus and pear together.
  6. When the asparagus spears have cooled enough to be able to handle, arrange 1 spear and a slice of pear on the vegan cold cut and roll closed.
  7. Toothpicks are handy to help hold the vegan cold cut in place.
  8. Arrange on a plate and drizzle the balsamic vinegar on top.

    Thank you for your comment- these are really yummy. And, we have a couple more new asparagus recipes to give you folks. Tomorrow is the farmer’s market, so I am hoping to get some nice fresh asparagus. I hope you make these and enjoy.

    Hi East Vegetarian,
    You are welcome :-) happy to share it. It’s not hard to make. But a bit tricky depending on what vegan lunch meat you use, and it’s size. Make sure the pears are slice thin, it doesn’t need to be so big, just a bit for sweet fruit, and the balsamic vinegar is really tasty with it. I hope it all goes well for you, I am sure it will..and you may want to have some toothpicks on hand in case they are needed to keep the vegan lunch meat wrapped around the ensemble.
