Banana Rhubarb Smoothie

With rhubarb coming into season now, we are happy to enjoy this tasty vegetable in many different ways. It is often combined with banana to bring a sweetness to the tart taste of the rhubarb.

Banana Rhubarb Smoothie

Yield: 3-4

Ingredients:

  • 1 cup stewed rhubarb (cooled)
  • 1 banana
  • 1 cup plain soy yogurt
  • splash lemon juice
  • 1/2 teaspoon ground cinnamon

For the stewed rhubarb:

  • 1 & 1/2 cups chopped rhubarb
  • 4 ounces sugar (or less to taste)
  • 1/4 cup water

Banana Rhubarb Smoothie

Directions:

To make the stewed rhubarb:

  1. Place the rhubarb in a small saucepan.
  2. Add the sugar and water and bring to a boil.
  3. Watch it careful and stir so that it does not boil over.
  4. When the rhubarb has broken down, remove from the heat and allow to cool.

To make the smoothie:

  1. Place the cooled stewed rhubarb in a blender.
  2. Add the banana (peeled and in chunks).
  3. Add the soy yogurt.
  4. Blend to a smooth consistency.
  5. Add the splash of lemon juice and the cinnamon and pulse once again.
  6. If you wish a thinner smoothie, you can add some ice cubes or soy milk.
  7. Garnish by sprinkling with cinnamon, and add perhaps a twig of lemon balm.

  1. Very Cool! I am not sure I can use rhubarb without strawberries though….it is in my blood! :) It looks amazing though….I may have to betray my childhood memories to try it out!

    Hi Vic, Thank you for your comment… You really should give it a try. It’s lovely. Yes, strawberries are great with rhubarb, they sweeten up the tartness, but the banana does also, and still leaves the opportunity for the rhubarb flavor to shine. You could always make it first as a banana rhubarb smoothie, taste it, and then if you still want you can add strawberries. I do hope you try it and enjoy.

    Thank you for your comment. Yes, indeed, the combination is great. I was surprised last year…when a friend (from Belgium) suggested a tart using the combo… that was mega yum…and can be seen here – Rhubarb Banana Windmills http://www.vegalicious.org/2009/04/17/rhubarb-banana-windmills/
    Both the smoothie, and the windmills are mag yum. What a handy thing to grow rhubarb is!I hope you enjoy the smoothie.

    This sounds amazing. I always hear of rhubarb and strawberry, but never anything like banana. I have to try this!
