This salad is a real winner from Kathy from the Healthy Happy Life blog. Kathy is also the creator of the fabulous Finding Vegan site. The salad is quick and easy to make, and very tasty. We enjoyed it tonight with dinner, and are looking forward to leftovers for lunch tomorrow.

We made it according to directions, the only difference was that we put a vegetable bouillon cube in the water as the couscous “pasta balls” cooked and a pinch of saffron. I can see how this would be popular with the kids, but it’s not just for the kids, as this tasty salad was really popular with us adults as well.
