Fava Bean, Walnut and Orange Salad

We enjoyed this bright tasty salad this evening as part of our dinner meal. The combination of orange with the favas and walnuts is very nice, and was especially enhanced by the dressing with mustard and sesame oil.

Serving Size: 4

Ingredients:

  • 12 ounces shelled fava beans (broad beans), blanched and skins removed
  • 1/2 cup walnut pieces, toasted
  • 3 oranges, peeled and sectioned

for the dressing:

  • 2 teaspoons Dijon mustard
  • 1 tablespoon sesame oil
  • 2 tablespoons wine vinegar or balsamic vinegar
  • 3 tablespoons olive oil
  • 1 teaspoon ginger
  • 1/2 teaspoon vegetable bouillon powder
  • 2 teaspoons brown sugar
  • 2-3 tablespoons water

Directions:

  1. Blanch the fava beans and remove their skins.
  2. Place in a medium bowl.
  3. Chop the walnuts and add to the fava beans.
  4. Remove the peel from the oranges and cut the sections from the orange. Cut each section in half.
  5. Add the orange pieces to the beans and walnuts.
  6. Make the salad dressing by combining the ingredients.
  7. Add a bit to the salad and ix lightly, reserving the rest of the salad dressing to be served individually at the table.
  8. We enjoyed this tasty salad on a bed of iceberg lettuce.

Notes:

If fava eans are not available, you could substitute lima beans or edamame.

    So refreshing looking. I can’t eat oranges do you think a sweet red ruby grapefruit would work?

    I am loving oranges in my dishes these days and this looks like a great combination of flavours… yum!

    Hi JoLynn, Thank you for your question, What a pity you c an’ eat oranges. Can you eat mandarins, or tangerines? Yes, I would say that the ruby red grapefruit would work also, perhaps you might need to sweeten the dressing a bit to offset. But if you are used to grapefruit, then hey would also be fine :-)

    Hi Janet Thank you for your comment. Yes, this was a very tasty salad. We really enjoyed it and have planted more fava eans so we and enjoy the salad again and again. We also like to combine citrus with vegetables. We have a nice pumpkin orange soup on Vegalicious that is one of our favorites as well as other yummy recipes using oranges. Perhaps check them out with the search function asking for orange.

  5. I have to admit to not really liking favas, but I think this salad would also work well with edamame (well, what doesn’t work well with edamame).

    Thank you for your comment.
    Well, there are lots of different kinds of favas. These green ones are very tasty. And, some people are allergic to soy and thus edamame are not good for them. Each to his own. We have a hard time getting edamame here, but favas are easy to get a hold of…we also grow them fresh in our organic garden. So we’re happy to enjoy them at their best. Either way, this recipe is very nice. I hope you enjoy it.
