Vegan Cranberry Orange Biscuits
We haven’t quite had our fill of cranberries yet, and the stores still have some packages of fresh cranberries. These flavorful biscuits or scones were really delicious, using only fresh orange juice to moisten the dough.

Ingredients:
- 1 & 1/2 cups flour
- 1 &1/2 teaspoons baking powder
- 2 tablespoons sugar
- 1/2 teaspoon salt
- pinch cinnamon (optional)
- 6 tablespoons vegan margarine, in small pieces
- 1/2 cup cranberries, chopped
- 2 teaspoons orange zest
- 1 tablespoon less than 1/2 cup orange juice

Directions:
- Place the flour, baking powder, sugar, cinnamon if using and salt in a large bowl.
- Whisk to mix.
- Add the vegan margarine and blend with a fork or your fingers to a lightly sandy consistency.
- Pre-heat the oven to 400 F / 204 C.
- Add the chopped cranberries and zest and mix lightly.
- Add the orange juice and mix until the dough is just moistened.
- Turn the dough out onto a lightly floured workspace and fold over to evenly blend.
- Fold only 3 or 4 times, as overworking the dough will make it less light and fluffy.
- Pat the dough out to a flat thickness of 1/4 – 1/2 inch.
- Using a floured cookie cutter or juice glass, cut 6-7 medium biscuits.
- Place on a cookie sheet prepared with baking parchment.
- Bake it in the oven for 15- 18 minutes until lightly golden brown.
- Remove from the oven and enjoy warm.
Notes:
We used just under a 1/2 cup of freshly squeezed orange juice. It was one large orange.

Thank you for your comment. Orange and cranberry are a famous combination., they are great together. These were really yummy. I hope you make them and enjoy them as much as we did. The lovely photos on Vegalicious are taken by my husband. I am most appreciative of his work.
This looks like a great recipe. I’m a little confused though…in the ingredient list it says “1 tablespoon – less than 1/2 cup orange juice” but under the notes, it said “less than 1/2 cup.” So how much did you use and where do I use the 1 Tbsp. of OJ? Many thanks for clarifying! – Barb

Thank you for your question. I apologize about being confusing. I squeezed 1 orange. It came out to be just short (1 tablespoon short) of a 1/2 cup of orange juice. I added that amount at step number 6. Right after mixing the dry ingredients and adding in the cranberries. I think if you squeeze a bigger orange and get a 1/2 cup of o.j…it may not make a difference… but if the dough comes out too wet, then you will need to kneed more flour into the dough and may need to bake a bit longer etc. So in describing the amounts I said how much I had gotten from the 1 orange…it was 1 tablespoon less that 1/2 a cup.
I will ask my husband to remove the – perhaps that way it will read more clearly. Thank you. I hope you make them, they are very tasty biscuits/scones.
