Denver Tofu Wrap

This vegan version of a Denver Sandwich really hit the spot today for lunch. We used corn tortilla as wraps to make a lighter version.

Denver Tofu Wrap

Ingredients:

  • 1 block (about 6 ounces) of tofu, crumbled
  • 2 teaspoons sweet grainy mustard

Notes:

A Denver Sandwich is traditionally made from scrambled eggs, with sautéed onions, green and red bell peppers and ham.

    Hi JoLynn,
:-) Thank you :-) They really were delicious I think they’re becoming a new favorite here. And, they make a nice lunch. We’ve started making our own soy milk and tofu, so they become even more special as they are “our own”. I hope you have a good new year as well. I’m looking forward to spring when I can get out in the garden and grow some more organic veggies.
