Soon we will be able to harvest fresh rhubarb from our garden. For this delicious soup I used what we still had in the freezer from last year. The slight sourness of rhubarb adds a wonderful dimension to the lentils.

I tried this last night and I couldn’t believe how good it was. It was only my second attempt at cooking something savory with rhubarb and it made a great impression.
I had to replace the parsley with oregano and the celery with red cabbage, and I didn’t had any yogurt. I’ll definitely be making this again.
