Review: Roasted Pumpkin and Walnut Manicotti

As soon as we saw this posted we knew we had to have it! And man, was it yummy. Perhaps it had something to do with the fact that it was our own organic pumpkin and sage, but I believe most of the credit goes to Vegan Dad. This recipe is fantastic. It has a great flavor, is easy to make and the instructions are clear and concise. It’s definitely one even good enough to be a holiday meal for guests, that all depends upon your presentation. We really enjoyed this recipe tonight and hope you give it a try too.
