Spinach Salad with Apple Butter Dressing

Well, it’s fall, and we are happy to have an abundance of apples. So, I made some apple butter, and was really happy to find this nice recipe for a spinach salad that uses apple butter in the dressing.

Serving Size: 4

Ingredients:

  • 1/2 cup apple butter
  • 3 tablespoons olive oil
  • 2 tablespoons cider vinegar
  • 2 teaspoons grainy mustard
  • 1 /4 teaspoons pepper
  • pinch salt
  • 4 cups fresh baby spinach
  • 1/2 cup pecan halves
  • 1/4 cup shredded soy cheese

Directions:

  1. Combine the apple butter, olive oil, vinegar, mustard and pepper and mix well.
  2. Place the spinach leaves on four plates and sprinkle with pecans and soy cheese.
  3. Drizzle with dressing just before serving.
