Spinach Salad with Apple Butter Dressing

This page as PDF Well, it’s fall, and we are happy to have an abundance of apples. So, I made some apple butter, and was really happy to find this nice recipe for a spinach salad that uses apple butter in the dressing.

Serving Size: 4
Ingredients:
- 1/2 cup apple butter
- 3 tablespoons olive oil
- 2 tablespoons cider vinegar
- 2 teaspoons grainy mustard
- 1 /4 teaspoons pepper
- pinch salt
- 4 cups fresh baby spinach
- 1/2 cup pecan halves
- 1/4 cup shredded soy cheese
Directions:
- Combine the apple butter, olive oil, vinegar, mustard and pepper and mix well.
- Place the spinach leaves on four plates and sprinkle with pecans and soy cheese.
- Drizzle with dressing just before serving.

I too have an unopened jar of apple butter which I was saving for some homemade biscuits but this will be even better! I love your recipes – I wish I had them all in a huge book on my kitchen counter.
Wow! This dressing sounds so good and it looks so incredibly easy to make! I love how spinach goes so well with a variety of fruits.
