Sweet and savory make such a nice combination. In this recipe they come from the mixture of apricots with mustard and soy sauce. The crunchiness from the snow peas makes it a real winner.

Serving Size: 4
Ingredients:
- 2 Tbs. olive oil
- 1 med. onion, finely sliced
- 3 cloves, garlic peeled and minced
- 1 tbs. sesame seeds
- 3/4 cup apricots, sliced
- 1/2 cup apricot preserve
- 1 Tbs. soy sauce
- 1 Tbs. mustard
- 250 grams snow peas, trimmed
- 1 pkg. tofu, cut in bite sized pieces
- 1/2 tsp. ginger, grated
- 1/2 cup water
- 2 tsp. corn starch
Directions:
- Add the oil to a large frying pan over medium heat.
- Add onion and saute for 1 minute or until glassy.
- Add garlic and tofu pieces, sauté and brown the tofu lightly on both sides.
- Add the sesame seeds and saute for 2 minutes.
- Add the apricots and snow peas.
- Make a sauce from the water, apricot preserve, soy sauce, mustard corn strarch and ginger.
- Season to taste with additional salt and pepper.
- Add the sauce to the the pan.
- Turn down the heat and allow the vegetables to cook until al dente.
- Served with rice.
Notes:
I used fresh apricots (about 4 nice large ones) but dried will also work fine.
