This page as PDF This is a French recipe that I got from a German lady it really is quite special. We really enjoy the flavor of the coriander, so I usually puree one bunch into the soup also.

Serving Size: 4
Ingredients:
- 2 bunches fresh coriander
- 1 Tbs. olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tsp. cumin, ground
- 1 & 1/2 Tbs. paprika, ground
- 1 large can tomatoes
- 1 qt. water
- 4 Tbs. tomato paste
- cayenne pepper to taste
- salt and pepper
- juice of 1 lime (or more)
Directions:
- The secret is the coriander (also commonly called cilantro). Use a lot of it!
- Tie the bunches of coriander leaves together with a string so that you can remove them later.
(Make sure they are nice and clean)
- Heat the olive oil and saute the onion.
- Add garlic, cumin, paprika and saute.
- Add the tomatoes, the tomato paste and the water.
- Season with salt and pepper and add the coriander bunches.
- Simmer, covered for about 30 minutes.
- Remove the coriander and puree with a blender or food processor.
- If you really enjoy the taste of coriander or cilantro, then cut some of the leaves of one bunch into the soup and puree to incorporate into the soup.
- Return and stir in the cayenne and lime juice.
- When it is warm it is ready to serve.

Wow…this sounds amazingly good! I have been craving tomato soup lately too!

I am going to make this this weekend–I cannot wait! It sounds so good. Quick question, though, for the large can of tomatoes, should they be whole peeled tomatoes, diced tomatoes, etc.? Or does it not matter since they are all pureed in the end anyway? I was just re-reading the recipe to make sure I had everything on hand (and to make of list of what I need to pick up), and thought that I would check. Thanks!

Hi Chris
I made this yesterday and it was superb! I pureed some of the cilantro with the soup like you suggested, and the flavor was delicious–thanks for this recipe!
