Review: Mexican Green Rice

This is a great way to enjoy rice, especially on a chilly winter’s evening.

Mexican Green Rice

The cilantro pesto is very easy to make, and smells wonderful while cooking. The insturctions are very easy to follow and offer a very nice dish.

The recipe says 34 cloves garlic!?! Surely they mean 3 - 4 cloves…

I went ahead and made this tonight (with 4 cloves of garlic). I added a little broccoli to the puree and then added black beans and a splash of lime at the end, and this was a big hit! The cilantro, chillies and garlic made it really flavorful. I wish I’d made a double batch.
