Warm Quinoa Lentil Salad
Quick and delicious!
Ingredients:
- 0,5 cup brown lentils
- 0,5 cup quinoa
- 1 small red onion, finely chopped
- 3 tomatoes, chopped and seeds removed
- A handful of fresh lemon balm
Dressing:
- 0,25 cup canola oil
- 1 tblsp lemon juice
- 1,5 tsp curry powder
- 1 tsp lime pepper
- 0,5 tsp black pepper
- 1 tsp fresh, grated ginger
Directions:
- Cook the lentils and quinoa (if you like, cook them in vegetable bouillon to get more flavor)
- Mix the dressing ingredients
- Mix all ingredients to cooked quinoa and lentils.
- Garnish with chopped lemon balm
