Banana walnut pancakes with maple syrup

This page as PDF These lovely pancakes make Sunday morning breakfast a special treat. Maple syrup is a delicious match for walnuts.

Yield: 12 pancakes
Ingredients:
- 1 & 1/2 cups flour
- 1 & 1/2 cups soy milk
- 2-3 large bananas, mashed with a fork
- 1/2 cup walnuts
- 1 & 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. vinegar
- 1 tbs. oil
- 1 tsp. vanilla
- 1-2 banana as garnish for the top, sliced
- maple syrup

Directions:
- Cut the walnuts into small pieces and keep in a small bowl.
- Sift the dry ingredients together in another bowl.
- Mix the soy milk with the vinegar and oil in a 3rd bowl.
- Mash the bananas and add to the soy milk, stir the soy milk and bananas to a smooth consistency.
- When ready to cook the pancakes.
- Heat a large skillet spray with cooking oil or place a small amount oil in the pan.
- Add the wet ingredients to the dry and stir with a spoon to moisten, don’t over stir of the pancakes will become flat.
- It’s o.k. if there are a few lumps in the batter, they will even out and cook o.k.
- Stir in the walnuts.
- Spoon 1-2 tablespoons full of batter for each pancake.
- Depending upon the size of your pan, you can fit 3 or 4 in a pan.
- The bottom side is done when small bubbles appear on the top of the pancake.
- Flip them with a spatula or pancake turner and cook on the other side.
- You can keep them warm in the oven with a pieces of aluminum foil over them until they are all cooked.
Notes:
It is important to cook the pancakes right away once you have mixed the wet ingredients with the dry. The action of the baking powder and baking soda begins once they become wet. You can prepare the ingredients in separate bowls and then wait until the rest of the family has awoken to mix and cook the pancakes.

That looks incredibly and wonderfully delicious. Banana pancakes are my favorite kind, but I’ve never tried a vegan recipe on them, looks like I’m about to though… =)
I’m putting these on my to try list. I’ve made banana/chocolate chip pancakes in the past but not thought of adding nuts to my pancakes.
I think I have some chocolate/raspberry/maple syrup in the fridge, I wonder if that would go nicely on these.
Ooo! Delicious! I’ll be giving these one’s a try soon for sure! Although given that I am a naughty breakfast skipper they will likely end up lunch or a quick and easy breakfast for dinner (yes, I do that a lot).
