Traditional brownies recipes usually use eggs and butter, but there is no reason to use animal products at all. Vegan brownies are delicious and easy to make.

Ingredients:
- 1 1/3 cup flour
- 1/2 tsp. baking soda
- 1/2 cup margarine, softened
- 1 cup sugar
- 3 tbs. oil
- 12 oz. tofu
- 1/3 cup unsweetened cocoa
- 1 tsp. vanilla extract
Directions:
- Preheat oven to 350 (F)
- Combine margarine, sugar and oil in a food processor until light and fluffy.
- Add tofu and process 2 min. longer.
- Add cocoa and vanilla and continue.
- Slowly add the dry ingredients.
- Pour batter into a lightly oiled pan and bake 25 min.
- We dust the brownies with powdered sugar just before serving.

In the course of working on a baking and pastry certificate from Santa Rosa JC, I was hoping to learn about the possibilities of starting a vegan bakery. I know there are some successful ones out there, but very few vegan alternatives here in the SF Bay area. The teacher just didn’t think it would fly. I’d love to hook up with some folks on a wholistic vegan lifestyle where we could live -and work- as vegans. Currently I pay the rent by serving all kinds of horrid samples at Costco! Any suggestions? These brownies are a great inspiration!

My wife is vegetarian and has some definite lactose issues to boot, so I’m always looking for recipes like this. However, as I get more and more familiar with the vegetarian world, I get more and more confused with the wide array of tofus. Which kind of tofu did you use for this recipe?

I used silken tofu, and baked this in an 8″ x 8″ pan. It took about 30 minutes.
Also, I don’t have a food processor, but a hand blender worked fine for this.
