Veggie Chili

This page as PDF Also known as chili sin carne. This is one of our camping meals, since it only requires one burner to prepare.

Ingredients:
- 1 large can stewed tomatoes
- 1 onion, chopped
- 1 can kidney beans, drained
- 1/2-3/4 cups soy granules (reconstituted)
- chili powder (to taste)
- 1/4 tsp. cumin
- lemon juice
- salt and pepper
- tabasco (to taste)
Directions:
Sauté the onion in a large skillet.
Pour all the other ingredients together in and heat.
Season to taste with tabasco, salt pepper and cayenne or chili powder.
Whenever I cook with beans, I add some cumin, it is known to help against the gassy effect that beans have.
I serve this over rice and with cornbread on the side.
