Yummy Walkers - sugar cookies

Ingredients:

300 grams flour
150 grams sugar
150 grams margarine
1 tsp. baking powder
1 package vanilla sugar
1 pinch salt

Directions:
Mix all the dry ingredients in a large bowl.
Add the soften margarine and mix well.
Put the dough in the refridge for 1 hour.

Pumpkin Jollof

Ingredients:

500 grams pumpkin, cut in bite sized chunks
1 onion, chopped
2 garlic, minced
50 grams raisins
1 chilipepper, minced
2 tbs. oil
1 liter vegetable bouillon
1 small Belgian endive, chopped
1 small mango or papaya, cut in bite sized chunks

Pea Soup wih Shiitake Mushrooms

Ingredients:

250 grams frozen peas
1 liter vegetable bouillon
100 grams dried shiitakes, reconstituted
20 grams margarine
1 tbs. Flour
2 tbs. almonds, ground
1 tbs. curry powder
salt
mint leaves to garnish

Directions:
Cook the frozen peas 5 minutes in 1 liter of water.
Add 1 liter of vegetable bouillon and cook for 15 minutes.

Apricot Coconut Cookies

Ingredients:

200 grams whole wheat flour
100 grams brandy
80 grams margarine, softened
25 grams corn or rice syrup
100 grams dried apricots, soaked and cut into pieces
50 grams flaked coconut
4 tbs. apple juice
cinnamon

Directions:
Wash the dried apricots and let them soak. When they are soft, cut them in small pieces.
